Healthy Black Bean Brownies
Delicious Black Bean Brownies
The kids love them! Vegan, gluten-free, a good source of fiber, gut friendly, super easy to make. This recipe is deliciously sinful but not too sweet! I cook the beans myself, to avoid the canned flavour. The cacao powder and dark chocolate chips add a good dose of healthy polyphenols to this recipe.
Makes about 12 servings
Ingredients
3 tablespoons of ground flax seeds mixed with 1 cup of filtered water, let rest for 5 minutes
2 cups canned or home cooked black beans
3 tablespoons vegetable oil (olive, avocado, grapeseed)
1/2 cup raw cocoa powder
1/3 cup gluten-free all-purpose flour
1 teaspoon apple cider or white vinegar
¼ teaspoon Himalayan salt
¼ teaspoon cayenne pepper (optional)
½ cup maple syrup
1 teaspoons pure vanilla extract
1 teaspoon baking powder
2 tablespoons hemp seeds (optional)
1/2 cup dark chocolate chips or chunks, 70% cocoa, or 1/4 cup for a less sweet brownie
Instructions
1. Preheat your oven at 375°F. Grease a square tin (23×23) or line it with parchment paper.
2. Whisk all the ingredients together in a food processor until it you obtain a dough like texture.
3. Pour the batter in the greased square tin.
4. Bake in the center of the oven until firm and a toothpick comes out clean, about 30 to 40 minutes.
5. Let the brownies cool before you unmould and cut them.
Serve with your favorite vegan ice cream, icing or coco whipped cream!
