Homemade Fizzy Ginger Ale
Homemade Ginger Beer Recipe
This sparkling drink is a natural and healthy take on the store-bought Ginger Ale. This recipe requires an additional fermentation step to make a fermented ginger juice. When the fermentation process is complete, you will get a gut friendly probiotic drink. The effervescence occurs naturally thanks to the fermentation process which lasts about 2 weeks. This naturally fizzy drink will surely please individuals who enjoy store-bought ginger ale or ginger beer.
Preparation for fermented ginger juice
Ingredients
1 piece 50g or more fresh ginger, unpeeled, grated
1/2 cup (100 g) organic cane sugar
1 cup (250 ml) filtered or spring water
Instructions
Put all the ingredients in a small, clean glass jar and stir lightly.
Cover the opening of the jar with a clean cloth or coffee filter, held in place by a rubber band.
Leave to ferment for 4-6 days at room temperature.
Store the fermented ginger juice in the fridge, taking care to close the lid. It will keep for several months in the fridge.
Ginger Beer
Ingredients
6 cups of filtered or spring water
1 large piece of fresh ginger (at least 8 to 12 inches in length), grated or sliced
1/8 cup organic cane sugar
2 tablespoon lemon or lime juice
4 tablespoon fermented ginger juice, filtered (see recipe above)
Utensils
Glass jar 1.5L or larger
Hermetically sealed bottle
Instructions
Put all the ingredients in your glass jar and stir lightly.
Cover the opening of the jar with a clean cloth or coffee filter, held in place by a rubber band.
Let your drink ferment at room temperature 2-3 days.
Strain your ginger beer with a fine mesh strainer to obtain a clear liquid.
Transfer your ginger beer to a clean, airtight bottle and be sure to close the cap tightly. Leave to ferment again at room temperature for about 7 days (the longer the fermentation, the less sweet your drink will be).
After about 7 days, you will notice that your ginger drink is sparkling. If you store your drink in the fridge, it will lose most of its fizz (but will keep for over a month). Stored at room temperature and consumed during the week, it will remain very fizzy.
