Saffron Basmati and Wild Rice with Dates and Macadamia Nuts
Delicious wild rice and wholegrain basmati prepared with saffron, dates and macadamia nuts recipe that is sure to please. This dish is also rich in fiber, gluten-free and vegan. You can serve it alone with a green salad or as a side dish with tofu and your favorite cooked vegetables.
Makes about 4 servings
Ingredients
2 packages (250g) of steamed wholegrain basmati or brown rice OR 500g cooked rice of your choice
1 cup (250ml) of wild rice, cooked
1 cup cooked lentils
5 juicy dates, such as Medjool, pitted and chopped coarsely
1 good pinch of Himalayan or Sea salt, to taste
3/4 cup of macadamia nuts, or blanched almonds, chopped coarsely
1/2 teaspoon of saffron, soaked in 3 tablespoons of hot water, keep the water
6 tablespoons of olive or walnut oil
1 tablespoon maple syrup
1 tablespoon tamari sauce
Instructions
1. Cook the basmati rice according to the instructions on the package. OR go directly to the next step if your rice is already cooked.
2. Combine all of the remaining ingredients in a large bowl. When the basmati and the wild rice are cooked, add them to the bol and mix well.
3. Season to taste and serve warm or hot with a lovely green salad!
